My kids love to eat sandwich especially if the sandwich I prepare for them has Eden cheese in it. Eating this sandwich for merienda makes for a perfect mother and daughter bonding moment.

Melt butter in large iron skillet over medium heat. Break eggs into skillet, breaking yoke & flip when each egg is already quite solid, cook on other side. When both eggs are cooked hard, put two slices of bread in skillet buttered side down. Put eggs on each slice of bread. Add one slice of cheese on each egg. Put the remaining slices of bread on top of each stack, buttered side up. Grill sandwich about 6 minutes until both sides are brown. Remove from skillet and serve. Makes 2 sandwiches.
