Cheese puffs made from choux pastry... Very easy to make and perfect for an appetizer or snack
1/2 cup water
3 tablespoons butter, salted or unsalted
1/4 teaspoon salt
1/2 cup
2 large eggs
3/4 cup grated Eden cheese
1. Put butter, water & salt in a saucepan and bring to a simmer.
2. Whisk in flour and cook until mixture forms into a ball.
3. Transfer into a bwol and cool.
4. Mix in eggs, one at a time into the cooled mixture unti fully incorporated.
5. Fold in 1/2 c cheese.
6. Pipe or scoop into bite size pieces in a parchment lined cookie tray.
7. Top with remaining cheese
8. Bake 20-35 minutes @ 425F or until golden brown.
9. Poke sides with a small knife or toothpick to release steam.
10. Serve warm.
