Potato salad de Manila

Potato salad that is time tested based on the basic potato salad that we learned to love as appetizer. It started this in the 90s and kept on upgrading it each time to suit the season.
ingridients:
- 1 kilo potato diced.
- 1/2 kilo chicken boiled and minced.
- 1 big bottle of mayonaise. (not the sweet type)
- chicken stock.
- salt and pepper
- bacon bits (fried to golden brown)
- 1 medium size cheddar cheese diced.
- spring onion.
- rosemary and thyme.
- lettuce
- basil
- pickle relish
procedure:
- Boil the chicken till its well cooked. minced it and then set aside the chicken stock.
- boil diced potato on the chicken stock then add rosemary and thyme while simmering. Drain once its done.
- mix chicken and potato on a salad bowl or any large container.
- Pour in mayonaise, mix it with diced cheese and bacon bits.
- season with salt and pepper.
- toss in some spring onion and pickle relish.
- garnish with basil. and serve on top of lettuce leaves.
You can make variation if you want it hawaian, toss in some pineapplle bits.
if you want it crunchy you can toss some cashew nuts or rosted peanuts.
you can try to modify it as long as you have the basic ingridients. best serve cold.
